The Zébrange is a brand-new arrival and a visual star in the chilli world. It was created by Belgian breeder Laurent Minet (CTH Gembloux) and is a cross between the sweet, fruity Aji Fantasy and the bell-shaped Christmas Bell (Bishop’s Crown).   • Spectacular appearance: The peach to orange-coloured fruits are covered in striking red longitudinal stripes (“tiger stripes”).
  • Baccatum flavour: It possesses the typically tangy, fruity and almost tropical flavour of South American Baccatum varieties.
  • Trend variety: Often touted as a “better” alternative to Sugar Rush Stripey, as the striping on the Zébrange is usually more consistent and visible earlier in the ripening process.

Plant characteristics

The Zébrange displays the typically vigorous and somewhat spreading growth habit of a Baccatum:

  • Growth habit: Grows very vigorously, tall, and forms many side shoots. The structure is often somewhat ‘airier’ and less compact than in Annuum varieties.
  • Height: Can reach 80 cm to 1.20 m (sometimes even more), depending on location and pot size. A support is advisable due to the abundance of fruit.
  • Leaves: Medium green and rather narrow.
  • Flowers: The white flowers have the yellow-green spots typical of Baccatum on the inside.

The Fruit

The fruits are little works of art and make the plant the perfect ornament:

  • Shape: Bell-shaped to slightly blocky, often taking on the shape of Aji Fantasy (similar to a small UFO or a bell).
  • Colour progression: They ripen from a light green to a light orange with bright red stripes.
  • Texture: Crisp, juicy and with a very pleasant, firm texture.

Flavour & heat level

Zébrange is the perfect variety for connoisseurs who prioritise flavour over extreme heat.

  • Heat level: 4 to 5 (mild to moderately hot). On the Scoville scale, it is estimated at around 5,000 to 15,000 SHU. The heat is mostly concentrated in the placenta inside.
  • Flavour: Extremely sweet and fruity with distinct hints of melon or peach. It has no bitter notes and is very refreshing.

Uses

Its milder profile makes it extremely versatile in the kitchen:

  • Eaten fresh: Sliced into rings in a salad or as a snack straight from the plant.
  • Salsas: Gives salsas a great colour and a fruity aroma without overpowering everything else.
  • Pickling: The striped rings look fantastic in a jar.
  • Stuffed: Due to its shape, it is wonderful stuffed with cream cheese and briefly grilled or baked in the oven.
