- The kitchen all-rounder: Ideal for anyone looking for an uncomplicated chilli for everyday use.
- High yield: The plants are often laden with long, red pods.
- Fast ripening: One of the varieties that reliably produces a bountiful harvest even in slightly shorter summers.
Plant characteristics
Cayenne Long Slim is characterised by robust and uncomplicated growth:
- Growth habit: It grows upright and slender, forming many side shoots. Despite its delicate growth, it is very sturdy.
- Height: Usually reaches a height of 60 to 80 cm. It is ideal for growing in the garden, in a greenhouse or in pots on the balcony.
- Leaves: The leaves are narrow, lance-shaped and a vibrant green.
- Productivity: A very rewarding variety that sets its first fruits early in the season and continues to produce until the first frost.
The fruit
The fruits are visually appealing and perfect for further processing:
- Shape: Very slender, elongated and often slightly curved or wavy. The pods grow to about 10 to 15 cm in length, with a diameter of only approx. 1 cm.
- Colour change: The fruits ripen from a rich dark green to a bright, glossy red.
- Texture: The skin is thin, making the Cayenne the ideal variety for drying.
Flavour & heat level
The Cayenne offers a clean, sharp heat without any complex sweetness or heaviness.
- Heat level: 7 to 8 (hot). On the Scoville scale, it ranges between 30,000 and 50,000 SHU. The heat is immediately noticeable and fades more quickly than with Chinense varieties.
- Aroma: A classic, smoky-spicy aroma. When dried, it develops the typical note one expects from high-quality chilli powder.
Uses
Its texture makes it the ultimate chilli for drying:
- Drying & grinding: The classic method. Due to their thin walls, the pods dry very quickly (even in the air) and are perfect for processing into cayenne pepper or flakes.
- Fresh: Ideal for seasoning stews, sauces, meat dishes or for pickling.
- Ristras: Due to its shape, it is excellent for tying decorative chilli strings (ristras) and hanging them in the kitchen.
