Plant characteristics
The Carolina Reaper is a vigorous, sun-loving plant:
- Growth habit: It grows very bushy and spreading. The branches are sturdy enough to support the multitude of heavy fruits.
- Height: Usually reaches 70 to 90 cm in a container, and over 1.20 metres in a greenhouse with optimal care.
- Leaves: Large, slightly wavy, rich green leaves, typical of the species Capsicum chinense.
- Special feature: The Reaper requires plenty of heat and a long development period. An early start to cultivation (January/February) is strongly recommended.
The Fruit
The fruits of the Carolina Reaper look as fearsome as they are:
- Shape: Roundish and stocky with an extremely uneven, ‘pockmarked’ skin. The most striking feature is the long, pointed spike at the end, reminiscent of a scorpion.
- Colour change: The pods ripen from green to an intense, bright fire-red.
- Texture: Inside, the walls are often thickly coated with capsaicin oil, which explains their enormous potency.
Flavour & heat level
The Reaper’s heat is not only extreme but also very long-lasting.
- Heat level: 10+++ (Extremely hot). The heat usually sets in with a delay, but then builds to an overwhelming intensity that engulfs the entire mouth and throat.
- Flavour: Those who can handle the heat are rewarded with a delicate, chocolatey-fruity note and a distinct sweetness. It possesses a depth that many other super-hot chillies lack.
Uses
Due to its extreme heat, the utmost caution is advised when measuring and handling it:
- Extreme sauces: The base for the world’s hottest hot sauces.
- Spice powder: In dried form, a pinch is enough to set a whole pot of chilli con carne alight.
- Chilli oil: Ideal for making highly concentrated chilli oil.
